Here are a couple of recipes to kick off the summer in the right way.

The Eton Messy Milkshake is a delightfully smooth and creamy summer concoction that is created using ingredients derived from plants.

If you're an experienced follower of plant-based diets or just embarking on your journey, this delicious strawberry beverage is an ideal indulgence for a sunny summer day. (Yields two generous servings)

To make the 'meringues', you will need one slice of lemon, 60 milliliters of aquafaba, 40 grams of caster sugar, a small amount of cream of tartar (about 1/8 teaspoon), and a dash of vanilla extract (approximately 1/4 teaspoon).

To make the shakes, you will need 300g of strawberries that have been frozen, 4 big portions of vegan vanilla ice cream, 200ml of Oatly whole (an alternative to milk), and 250ml of Oatly whippable that has been whipped until it forms stiff peaks. Serve the shakes with some fresh strawberries on top.

To prepare the meringues 1. Heat up the oven to 90C. Place two baking sheets with baking parchment on top and keep separately.

2. Take the lemon wedge and gently squeeze it over a fresh, average-sized bowl or the bowl of a stand mixer. Remove any extra juice by gently blotting it with a paper towel.

3. Incorporate the aquafaba into the bowl and vigorously whisk at the maximum speed until you achieve the formation of gentle peaks.

Gradually incorporate the caster sugar into the mixture while continuing to whisk, and continue whisking until the mixture forms stiff peaks.

4. Incorporate the cream of tartar and vanilla into the mixture and whisk briefly to blend. Place the meringue mixture into a piping bag and squeeze out small tear-shaped dollops directly onto the baking sheets that are lined with parchment paper.

5. Put it inside the oven and let it bake for a duration of 2 hours. After that, switch off the oven and prop the oven door open by using a wooden spoon.

Allow the meringues to air out and reach a lower temperature inside the oven for an additional hour before placing them in an airtight container after they have cooled to room temperature.

To create the shakes, simply add the strawberries, ice cream, and Oatly whole into a blender or milkshake mixer.

Blend until creamy and well combined, then pour evenly into two milkshake glasses, making sure to leave approximately 1.5 inches of space at the rim of each glass.

2. Place meringues on top of the shakes, then add the whipped Oatly whippable and finish off with sliced juicy strawberries.

3. Enjoy chilled alongside a straw and a utensil.

List of Ingredients: - Approximately 25 grams of shortbread cookies - Approximately 15 grams of pistachio nuts (without shells), roughly chopped - 2 tablespoons of melted butter - 4 ripe strawberries - Approximately 12 fresh raspberries - 100 grams of blueberries - 4 tablespoons of strawberry preserve, like Bonne Maman - 1 tablespoon of Elderflower Cordial - 100 grams of soft cheese - 125 grams of ready-made vanilla custard - 75 grams of crème fraîche - Additional fruits, chopped pistachios, and mini shortbreads for decoration.

Procedure Take the shortbread cookie and place it inside a bag specifically designed for storing food. Utilize a rolling pin to crush the cookie into small fragments resembling crumbs. Combine these crumbs with the pistachio nuts and melted butter, and then distribute the mixture evenly between two jars typically used for preserving jam.

Take two strawberries and cut them into thin slices. Use these slices to create a lining on the inner sides of the jars. Next, roughly chop the rest of the strawberries and place them in the center of the jars. Finally, add the raspberries and blueberries on top.

Mix the preserve, the elderflower syrup, and 1 tablespoon of water together. Drizzle the mixture over the fruit.

In the end, mix the mild cheese, custard, and crème fraîche until silky, then dollop over the fruits.

Conclude your delightful treat with a selection of additional fruits, a dash of nuts, and a petite Crown biscuit made of delicious shortbread.
