I had the pleasure of trying out the new Champagne À La Cart at St. Regis. This fancy champagne cart is a special part of the St. Regis Evening Ritual, where they showcase The Art of Sabrage. As soon as the cart rolled into the bar and everyone saw all the delicious treats on top, I knew it was going to be a great night. Haute Caviar Company, owned by Lisa Simon, carefully selects the best caviar from all around the world. Some menu highlights include Paddlefish Caviar, Kaluga Hybrid Caviar, Blini with salmon and Trout Caviar, Oysters with Paddlefish Caviar, and sweet treats like Chocolate Strawberry and Yuzu and Raspberry Macarons made by the hotel's pastry Chef. They also offer Dom Pérignon Vintage 2012, Veuve Clicquot Yellow Label, and Moët & Chandon Impérial to pair perfectly with the caviar selections from the champagne cart.

As the moment for sabering arrived, the excitement was palpable. Some eagerly began a countdown to 6pm, as if it were the start of a new year. The sommelier, dressed in elegant attire, brought a touch of elegance to the event. Seeing him skillfully slice the bottle open with a quick motion of the saber was captivating. It was a delightful mix of performance and history; I couldn't resist rushing over to taste the champagne straight from the bottle he had just sabered.
